Myself, I take three, mostly because I like having the optimal single-exposure image in case movement makes the set of images impossible to merge.
Even a little wind can make leaves on trees not mergeable. Adding more images to the problem just makes it worse since there will be leaves in more different positions. But I would rather have too many exposure options than not enough, so I tend to favor using seven exposures separated by two stops each.
As for the separation between exposures, there is no need to use one-stop increments for HDR capture. Two stops will provide all of the overlap that HDR software needs to assemble an excellent result.
